Coconut and Paris

Chestnut and plum Paris Breast

Hello and welcome back. I’d like to share some photographs of two very beautiful deserts I had the pleasure of shooting very recently for the new website of Wilde Orchard. The chestnut and poached plum Paris Breast, which is made from choux pastry, like an eclair or profiterole. Then a very different animal in the coconut and lemongrass panna cotta, which, as you’ll see, looks amazing.

This first shot has a good amount of negative space, which I like to do.  This can be very helpful for adding text on the right hand side, most useful for web and printed publications.

Now for the coconut & lemongrass panna cotta with pineapple jam & white chocolate snow

These were served up in the most perfect sized shot glasses. The white chocolate snow makes a beautiful texture contrast to the silky smooth coconut and lemongrass panna cotta. The splash of green from the micro coriander is just enough to make it pop.

Both of these shots used strobe light as the only source, it gets pretty dark and quickly this time of year but the show must go on. The same effect can be obtained with natural light, but commercially you need to be able to create this any time, any place, any where. That gives me an idea for a Martini shoot. I’m showing my age now.

I hope you enjoyed seeing what wonders I get to photograph. The recipes and technique, for most of the Wilde Orchard dishes I shoot, will be available on the new Wilde Orchard website, coming soon.

If you have any questions or comments, I’d love to hear from you, just post in the comments below.

Thanks for stopping by, more coming very soon.
